This delicious noodle dish packs some great flavour!ā£

Iā€™ve made it with lean beef mince, but it also works well with Quorn mince (adjust ingredients / macros etc as necessary)ā£

Serves 2ā£

ā£

Per serving: 540kcals | 40.9g Protein | 56g Carbs | 18.8g Fatā£

ā£

Ingredients:ā£

2x nests of fine egg noodlesā£

2x spring onions, sliced ā£

100g mange toutā£

1x red pepper, sliced thinā£

1 tbsp light soy sauceā£

1 tbsp rice vinegarā£

1 tbsp sesame oilā£

15g ginger past or 1 teaspoon of grated fresh gingerā£

40g chilli jamā£

1x red chilli, choppedā£

250g lean beef mince or quoin minceā£

ā£

Method:ā£

1. Boil a pan of water, cook noodles as per packet instructionsā£

2. Heat a large pan, add the mince and cook until brownedā£

3. Add the mange tout, red pepper, half the spring onion, and the ginger paste - stir well and cook for a few minsā£

4. Add the rice vinegar, chilli jam, soy sauce, and half the chilli - stir wellā£

5. Toss the drained egg noodles in the sesame oil, and season with saltā£

6. Plate up the noodles, and top with the sticky ginger beef!ā£
